Used Car from Dealership?

I am buying a used car from a dealership. I am paying in installments so I can't pick up the car until I've fully paid for it. How can I prevent the car from being used 'cause I will not be with the car 24/7. Isn't it possible for the dealer to sneak use the car? How would I know?
